Paint it with White Sauce Skinless Grilled Chicken

This recipe is a favorite of our neighbor Suzanne B.  We grilled this on her Weber last week and I had to have the recipe!  The White Sauce was published by Southern Living in 2010- probably need to attribute Chris Lily of Big Bob Gibson in AL too as he put white bbq sauce on the map!

Ingredients

4 Chicken Breast- skinned and boned
Corn on the Cob is a perfect grilled side
White Sauce:
1 cup mayonnaise
3/4 cup chopped fresh cilantro
3 Tbsp. white wine vinegar, divided
1/4 tsp salt, divided
1/8 tsp pepper


Preparation:

Combine mayonnaise, cilantro, 3 tbsp vinegar, 1/4 tsp. salt, and 1/8 tsp pepper in a small bowl
Paint 1/4 of the white sauce on chicken breasts and allow to sit 10 minutes before grilling
Reserve 3/4 of white sauce to basted chicken during grilling

Grilling:

Preheat grill to 350F-400F
Grill Chicken for 15-20 minutes total time
Turn after 5-7 minutes and baste
Turn again after 10-15 minutes and baste
Turn and grill to finish
Apply remainder of white sauce just before removing from the grill

TIP- Grill the corn on the cob alongside the chicken for same amount of time.  Paint with melted butter just before removing the corn.
