Place separated wings in bowl and spray liberally amount of Duck Fat. Add salt and pepper to taste mix well.
Move wings away from one channel and position the holes in over the flavorizer bar.
Add pellets or chips and turn that burner on high. Turn other burners on low or off. Allow pellets to smoke until desired smokiness is reached. Once reached, carefully move grates over and push the pellets through the holes.
Heat grill to medium/medium high .
Turn frequently until golden brown.
Once temp reads 185 F, baste wings with sauces and continue to cook turning and basting once.
On the wings basted with garlic butter, sprinkle with parmesan
