Grilled Sweet Potato and Apple “Gratin”

Here is an interesting interpretation of sweet potato casserole and grilled apples. The sweet potatoes are not mashed but grilled as cute little discs.

Ingredients

Servings

3 sweet potatoes peeled and sliced into ¼” thick discs

3 large apples peeled and cored, cut into ½” thick slices

2 tablespoons vegetable oil

Salt and pepper to taste

2 cups heavy cream

1 teaspoon cinnamon

1 teaspoon nutmeg

¾ cup real maple syrup

¾ cup pecan pieces

½ cup dark brown sugar

¼ cup flour

½ stick butter, melted

Directions

Step 1

Preheat pellet grill to 450F. Toss sweet potatoes with 1/2 of the vegetable oil and some salt and pepper. Place on GrillGrates and cook for about 8 minutes before giving them a 45-degree twist. 6 more minutes and you are ready to flip. After 8 more minutes you should have some nice tender sweet potatoes. Remove them from the grill to a sheet pan and repeat process with the apple slices. The apples will not need quite as long to cook. Remove apples from grill and lower temperature of the pellet grill to 375F.

Step 2

In a large bowl combine the heavy cream, maple syrup, cinnamon and nutmeg. In a smaller bowl combine the pecans, butter, flour and brown sugar to form a crumble.

Step 3

In a 9”x 9” baking dish pour a little of the cream mixture into the bottom. Arrange a layer of sweet potatoes and then a layer of apples. Pour some more of the cream mixture over top. Repeat with sweet potatoes apples and cream until the pan is full. Crumble pecan mixture over top and place into pellet cooker set at 350F. Bake for 45 minutes or until the top is nice and browned. Remove from pellet grill and serve warm.
