This is a great twist on a classic breakfast dish. Stuffing and grilling brings a whole other layer of flavour and texture to french toast. If you like jelly doughnuts, you will love this.
Using a paring knife make a small slit in the side of each slice of bread, going
almost to the other side but not all the way through. Set aside.
In a medium bowl whisk together granulated sugar, heavy cream, and vanilla extract. Add in eggs and whisk to combine.
Arrange the sliced brioche in a 9x13-inch baking dish. Pour egg mixture over the
break, let soak for at least 30 minutes.
Remove bread from egg mixture and place directly on rails down grill grate.
Grill for 5-7minutes allowing bread to brown, flip and repeat on other side.
While toast is cooking prepare filling. In a medium bowl combine the cream cheese and ricotta, beat with mixer until light and fluffy. Gently fold in jam or fresh fruit. Put filling in a piping bag and set aside.
Remove bread from grill once browned and allow to cool 2-3 minutes; cool enough to handle.
Once able to handle pipe the filling inside the bread via the slit of the bread.
Once plated dust with powdered sugar and additional fresh fruit if desired.
