Fresh caught Mahi Mahi is a grilled delight. The pressure was on as these were Daddy / Daughter caught fish and we were feeding a 10 people. No pressure since I had the privilege of grilling on a Big Green Egg...

Ingredients

Pieces of Mahi Mahi filet

Denny Mikes Fintastic Seasoning OR your favorite fish/seafood seasoning

Olive Oil

Directions

Step 1

Dry the Mahi Filets, then lightly coat with olive oil. Use the Olive Oil sparingly.

Step 2

Sprinkle Fintastic or your favorite seafood seasoning over both sides of the filet; let stand for 30 minutes

Step 3

Preheat the GrillGrate surface to 500-600 degrees F

Step 4

Lightly oil the raised rails with Duck Fat Spray, canola oil, or grill spray

Step 5

Place Filets - MEAT SIDE DOWN on the GrillGrates (skin or skinned side up)

Step 6

Allow to cook for 5 minutes.

Step 7

Using the GrateTool LIFT AND TWIST FILETS to create cross hatch sear marks

Step 8

Wait 5 more minutes and flip

Step 9

Using the GrateTool lift and turn filets keeping them in one piece.

Step 10

Presentation side up- cook to finish. Likely 4 more minutes for thin filets or 8 more minutes for thick filets.

Step 11

Total grilling time is 14-18 minutes on medium heat or until the internal temperature of the fish is 140 degrees F.
