Lemon Rosemary Marinated Grilled Chicken Thighs

Inspired by a classic Greek recipe, the combination of lemon and rosemary along with copious amounts of garlic really transforms mundane chicken thighs into something super delicious! These chicken thighs will cook up rather quickly so they are perfect for a quick weekday meal. For this recipe you will just need to plan ahead a little so the marinade has time to work its magic.

Directions

Place all ingredients except chicken in a large bowl and whisk to combine. Place chicken thighs in a large ziplock bag and pour marinade over. Be sure chicken is thoroughly coated before sealing bag. Refrigerate for at least 4 hours but no more than 12 before grilling.

Preheat grill to medium heat (about 450 at the grill surface).

Remove chicken thighs from marinade and allow to drain. Place thighs on preheated grill and cook for 6-8 minutes before turning. Chicken thighs will be ready when an internal thermometer reads 170f.

Ingredients

 6-8 boneless skinless chicken thighs
 10-12 cloves of garlic, minced
 3 lemons, juiced and zested
 1 cup of olive oil
 2 T minced rosemary
 2 t cracked black pepper
 2 t kosher salt
 2 t red pepper flakes
