Grilled Marinated Lamb Chop Recipe

Yields3 Servings

 6 Lamb Chops
 2 tbsp minced garlic
 1 tbsp fresh rosemary
 1 tsp fresh thyme leaves
 zest and juice of one lemon
 1 tbsp coarse sea salt and pepper
 2 tbsp olive oil
 pinch of cayenne pepper

Add all ingredients except lamb chops to a food processor and blend to make a marinade.


Add to the Lamb chops in a bag and squeeze out all the air and marinate for 2-4 hours up to overnight.


2. Remove lamb chops and let them come to room temperature while you heat the grill to medium high heat and spray with oil, I use the duck fat spray.


Grill Lamb chops on the grill grates for about 2 minutes per side or until medium rare.


I always hit the cooked lamb chops with some fresh lemon juice after grilling to bring in some brightness and zing.
